So those were my numbers and they were "guestimates" but pretty close to what I thought my prices were! I went grocery shopping on Saturday and I spend $30.37! I was so proud of myself! I did discover today that daddy must have been eating some of Caeli's cereal so I am going to have to spend $2.50 and get her some more cereal! :)

Classic Chocolate Chip Cookies!

Well I realized I didn't have enough cheese to make my Chicken Delight so today we just had leftover chicken soup again. I don't know if I clarified yesterday that the recipe of soup makes A TON of soup! So today our menu ended up being as follows:

December 16, 2008
Breakfast: Cereal
Lunch: Soup
Dinner: Soup

Yes lots of soup. We like it though so its okay! Tomorrow I will have to make something new to give us a break from chicken soup!

I plan on going to get a few groceries tomorrow so I should be able to make a good dinner. I plan on making Chicken Delight so I will post the recipe tomorrow. It is a family favorite! I am also going to try making homeade cookies for the very first time. I'm going to be making the Toll House Chocolate Chip cookies because that is what I'm contributing to small groups on Thursday! I am very excited to try making cookies! I think this will be a lot less expensive then cookie dough. I'd love a price break down if anyone has one for this recipe.

Nestle Toll House Chocolate Chip Cookies
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter or margarine, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large egg
1 (12 ounce) package NESTLE® TOLL HOUSE® Semi-Sweet Chocolate Morsels
1 cup chopped nuts

Directions
1.
PREHEAT oven to 375 degrees F.

COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.

BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Creamy Chicken Vegetable Soup

Ok so I decided to make Cream Chicken Vegetable Soup today because its so healthy and yummy! This is an adaption of my mother in law's recipe to what our family prefers! We like a thicker soup than her original recipe.

Recipe:

Creamy Chicken Vegetable Soup
Ingredients:
1 lb boneless skinless chicken breasts
2 cans of chicken broth
water
1 cup rice
4 small peeled cubed potatoes
1 lb carrots, sliced
1 large onion, chopped
1 large bunch of celery, chopped
1 can corn (including the juice)
1 can cream of chicken soup(or cream of celery)
Salt and pepper to taste

Put 2 cans of chicken broth on to boil and add water til it fills your pan about 3/4 full. Next add chicken, and season with pepper Bring to a boil and simmer until chicken is thoroughly cooked. Remove chicken from pan and let cool.

Add all other ingredients to chicken broth. Bring to a boil and simmer for about an hour until all vegetables and rice are tender. While broth mixture is simmering, shread the chicken and add the chicken back to soup mixture.

Serve with crackers or cornbread.

Conclusion:
This soup is delicious. It makes you want to cook this soup everday for the rest of your life. It is hearty but healthy. It fills up Mr. Hungry Man. I think tonight I might even puree some up for Little Football boy. Princess Belle isn't much of a soup eater quite yet. She doesn't like "hot" things and she is lacking in the patience area. I'm sure she will eat some tonight though with crackers because she loves anything she can eat with crackers. Anyways, make this for your family. You won't regret it. You will feel like you are the best mom in the world for making it too.

Hi! Nice to meet ya! I am Jordon but you can call me Menu Planning Mama! My family and I are learning to stick to a budget and through the process I have learned that I enjoy cooking. I have started doing very exact Menu Planning each grocery trip and I am learning that it really helps me to stick to my budget. Oh what is my budget you ask? We are trying to only spend $50 a week on food for the 4 of us. That doesn't not include formula for Little Football Boy though. We have been doing this for about 5 months now and it is going really well. I shop at a discount store and have really tried to avoid Walmart because I spend too much money there. So this is my plan for the week. By no means does this mean I will actually stick with this plan but it sure would be great if we did! I know that I probably don't make the healthiest things but I am trying. I am a very young mom (20) so I am still learning recipes! I will share my recipes with you as the days go on!

If you are wondering what Cracker Sandwiches are let me explain. They are just our homeade version of lunchables. Cracker sandwiches are just the name that Princess Belle has coined for them.

I normally make Little Football Boy some mashed bananas mixed with rice cereal and a bottle for breakfast. During lunch and dinner he has a vegatable and a bottle. He has a few bottles in between too :) I budget his formula seperately from our groceries because I normally find his formula on Craigslist. He uses the kind that WIC uses and so people usually sell what they have left when their children turn one so I can get a $12 can for usually about $5-6. I usually buy about 10 cans for a month and this has been plenty for him. I am so happy I figured out I could buy formula there though because it has been such a money saver for us.

Well this is all for now. I will post my recipe for Chicken Delight soon. It is a family favorite that my mother use to make :) It has now become one of Mr. Hungry Man's favorite!
